Camp-Fire Baked Apples

Ingredients:

  • 1/4 cup brown sugar
  • 1/4 cup chopped pecans or hazelnuts
  • 4 teaspoons dried currants or raisins
  • 1/8 teaspoon ground dried spicebush berries, allspice, or cinnamon
  • 4 baking apples
  • 4 teaspoons butter

Directions:

  1. In a small bowl, combine the brown sugar, chopped pecans, currants (or raisins), and the ground spice.
  2. Core the apples from the top, creating a large enough hole in the center for the filling, but be careful not to pierce the skin at the bottom.
  3. Place 1 teaspoon of butter inside each apple, followed by 1 tablespoon of the filling mixture.
  4. Wrap each apple tightly in aluminum foil and place them, top down, directly into the hot coals.
  5. After 5 minutes, use long tongs to turn the apples right side up.
  6. Cook for an additional 4 minutes.
