Cherokee Black Bean Soup

Ingredients:

  • 1 cup sliced leeks
  • 1/3 cup oil
  • 2 cloves garlic, crushed
  • 2 lbs canned black beans
  • 1/2 cup water
  • 1 1/8 tsp freshly ground pepper
  • Salt to taste

Directions:

Serve hot. Enjoy!

In a large saucepan, sauté the sliced leeks in the oil until they are golden.

Add the crushed garlic and half of the canned black beans along with their liquid. Use a fork to mash the beans in the saucepan.

Next, add the remaining black beans with their liquid, but do not mash them.

Stir in the water, salt, and freshly ground pepper.

Cover the saucepan and let the mixture simmer for 40 minutes, stirring occasionally.
